What Is Medovik?

Medovik is a layered honey cake in which thin, fragrant honey sponge layers are stacked with a sour-cream (smetana) based frosting and left to rest overnight. Its name comes from the Russian word for honey.

Its character comes from two things: the gentle caramel note honey gives the layers, and the frosting that slowly softens the sheets as it soaks in. That is why Medovik is at its best not fresh from the oven, but after it has rested.
